Fania Lewando (born 1888/1889 in Wloclawek, died 1941) was a Polish-Jewish chef, restaurateur, nutritionist and cookbook author. Between the two world wars, she ran a popular vegetarian restaurant called "Diet-Jewish Eatery" in Vilnius, which attracted both local residents and celebrities. In addition to the restaurant, Levando also ran a culinary school, where she shared her knowledge of vegetarian cuisine.
"Djeto-vegetarian cuisine. 400 dishes exclusively from vegetables and fruits" was a pioneering work in the field of vegetarian Jewish cuisine. The book contains 400 recipes based on vegetables and fruits, adapted to kosher culinary principles. The publication was available in both Polish and Yiddish.
