The author, as she herself writes, was prompted to publish this book by ""the dearth of products after the war, the shortage of many articles, the small, compared to the earnings of workers, earnings of the intelligentsia. Young, and sometimes even older housewives must often refer to a cookbook ? and all the books written and published before the war, at a time of great abundance and cheapness of products, give dishes that are very tasty indeed, but completely inaccessible due to the amount of products needed to make them and, therefore, the cost of their preparation. This will not be a university for those ladies who already know their way around the kitchen, but a mere common school for young, inexperienced housewives, giving those knowledge which every cook should possess."
