Champagne unusual, in the full sense of the word. It is made from fruit harvested from vines that remember the days before phylloxera. They overgrow two enclosed small plots of land, Clos Saint-Jacques and Chaudes-Terres, which miraculously escaped destruction by phylloxera.
Their roots run as deep into this unique habitat as they do into the history of French winemaking. Those lucky enough to sip this Champagne discover the wine of yesterday, the wine of bygone times, which Bollinger, thanks to its craftsmanship, makes ever-present.
In the 2013 vintage, the champagne is mineral, fresh and with raised acidity. This is all the result of a slightly cooler vintage. Remembering how beautifully Champagnes from similar years develop, we look forward to its maturity.
